Jinsei Motto, from Chefs Patrick Bouaphanh and Eric Blanck, sits in the heart of Logan Square built around dry-aged seafood — the restaurant describes itself as Chicago's original and largest sushi program built on that technique, aging fish to draw out depth and complexity before it reaches the counter.

Live fire runs through the menu as well: seafood and meats are cooked over Japanese oak charcoal alongside the sushi program, with ingredients sourced both locally and internationally, including Tokyo's Toyosu Market. The result sits sushi and live-fire cooking side by side on the same menu.

The restaurant has built a reputation locally for its food, service, and atmosphere, with a chef-driven counter experience where pacing and selection can vary night to night. Michelin selected Jinsei Motto for its guide in 2022.
