Austin built its reputation on smoke — hours-long brisket lines that are somehow worth it — and breakfast tacos that locals will fight about. But the city grew up: ambitious kitchens, serious sushi, and chefs who treat Hill Country like a pantry. It's still weird. It just eats better now.
