Barley Swine has been Austin's farm argument for a decade and a half: Bryce Gilmore's tasting menu builds itself from whatever local growers deliver, and seven consecutive years of Beard Best Chef nominations track exactly how consistently that gamble pays off.

The Michelin star, when Texas finally got a guide, read as overdue confirmation. The cooking stays seasonal to the point of restlessness, but the underlying bet never changes: Texas farms, pushed hard, can carry fine dining. Here they have, for a long time.

The Spot
Barley Swine is chef Bryce Gilmore's tasting-menu restaurant on Burnet Road in Brentwood. The menu changes with the seasons, built from what local farmers bring in, and Gilmore has described the kitchen's approach as cooking with bold flavors across multiple courses.

Signatures that recur on the menu include Cured Hiramasa, Big Tree Oyster, Chawanmushi, Chipotle Halibut, Smoked Pork Shoulder, and a 30+ day dry-aged Akaushi Ribeye, with Watermelon Sorbet and Celery Chiffon Cake among the dessert courses. Vegetarian, pescatarian, and gluten-free versions of the tasting menu are available upon request.

Gilmore has been a James Beard Award finalist for Best Chef in six consecutive years from 2013 to 2019, and a Rising Star Chef semifinalist in 2012 and 2013. Barley Swine itself was named a James Beard semifinalist for Outstanding Hospitality in 2026. Michelin awarded the restaurant one star in both its 2024 and 2025 Texas guides. Barley Swine shares ownership with sister restaurants Odd Duck and Sour Duck Market.
