Hestia is built around a twenty-foot hearth, and everything else is commentary: Kevin Fink and Tavel Bristol-Joseph's downtown kitchen runs Texas produce through live fire with a control that turns smoke into seasoning rather than spectacle.

Every section of the menu draws from the same coals, and the star — earned in Texas' first Michelin guide and kept — recognizes what regulars already knew: this is Austin's most complete fine-dining room, from the bread service to the cellar.

The Spot
Hestia sits in Downtown Austin serving fine dining through a tasting menu format. Diners regularly single out dishes like the halibut, wagyu, and a custard course, along with sourdough and steamed preparations that show up across write-ups of the menu.

Michelin awarded Hestia one star in 2024 and retained it in 2025. StarChefs named the restaurant a Rising Star for the Austin-San Antonio region in 2023, and A Taste of Koko included it on a 2025 best-of list for the city.
