Interstellar BBQ smokes Modern Texas barbecue off a service road in northwest Austin, and the name on the guide page — a Michelin star since Texas' first edition — still reads surreal for a strip-mall smokehouse. It shouldn't. John Bates cooks smoke like a chef, because he is one: three decades of kitchens stand behind the pit.

Tradition supplies the fundamentals; the menu pushes past them, and the result is barbecue that competes with tasting rooms instead of just other pits. The line forms accordingly.

The Spot
Interstellar BBQ sits along RR 620 in the Anderson Mill area of northwest Austin, led by chef and pitmaster John Bates. A Corpus Christi native with more than three decades in hospitality, Bates has also built Yellow Bell Tacos, Deft Pies, and The Noble Pig, and describes his approach here as Modern Texas barbecue — rooted in the state's fire-and-smoke traditions but pushed in his own direction.

Burnt ends, sausage, and pork belly anchor the smoked meat list, served alongside house bread and peach tea. The sides and desserts have built their own following, with scalloped potatoes, gouda, poppers, and banana pudding regularly coming up as reasons to visit.

Michelin awarded Interstellar BBQ a star in 2024 and retained it in 2025. The Infatuation scored it 8.5 out of 10.
