Lockhart is the most credentialed barbecue town in Texas, and its establishment is measured in generations. Barbs B Q walked in and earned a national profile in about two years — a Bib Gourmand, a Beard Best New Restaurant nod, the Times' list — cooking barbecue that treats the sides as seriously as the smoke.

That last part is the tell. In brisket country, sides are an afterthought; here the green spaghetti gets argued about like the beef. The old pits made Lockhart a destination. Barbs is why the pilgrimage got longer.
