Suavecito Birria & Tacos is a collaboration between chefs Emma Villalon and Bulmaro Maldonado and restaurateurs Randy Magpantay and Jeremy Cheng, who worked together for years running a corporate catering operation and a chicken spot in San Mateo before opening this taqueria in February 2021.
The menu centers on quesabirrias made with USDA Prime braised beef, dipped in beef jus and griddled crisp, served with consomé for dipping. Tacos get the same beef-jus griddle treatment on white corn tortillas, and the 24K California Burrito stuffs a flour tortilla with tater tots, jack cheese, and orange sauce. Mama Emma's Nachos and a chopped salad with pepitas and roasted jalapeño vinaigrette round out the specialties, alongside house guacamole and hand-cut tortilla chips made in-house. The MVP Sonora Dog is another signature from the group's catering days.
The space is a counter operation with limited seating, built primarily around takeout and delivery.
