Our Take

Saison runs on a wood-fired hearth, and nearly everything on the tasting menu answers to it — charred cabbage, trout crisped under its own skin, course after course built around smoke and ember rather than around it. That's the engine, and it's been running since the restaurant's pop-up days, long enough to turn a single technique into a full language rather than a gimmick.

The service matches the ambition of the food instead of just dressing it up. Tableside pours, a hand with the caviar that doesn't hold back, the choice of your own knife for the main course — these are the genre's usual flourishes, but here they feel earned rather than performed, which is why the praise for the room keeps landing on consistency and value as much as on spectacle.

A string of James Beard Outstanding Service recognitions, semifinalist nods building to back-to-back finalist years, backs up what the dining room already tells you: this isn't a kitchen coasting on fire and theater. Michelin's Two Stars confirm the rest. The hearth is the hook, but the discipline around it is the real achievement.

The Spot
Saison is an open woodfire restaurant in San Francisco built around live-fire cooking, with Executive Chef and Co-Owner Richard Lee drawing on California's seasonal terroir for a multi-course tasting menu.

The wood-fired hearth drives most of the kitchen's output — smoky, ember-charred dishes like charred cabbage and trout with crackled skin move through a lineup of around thirteen courses. Service includes tableside pours, generous caviar, and the option to choose your own knife for the main course.

Michelin awarded Saison two stars in 2026, and the restaurant has been named to North America's 50 Best Restaurants list in both 2025 and 2026. The restaurant's chef was a James Beard Best Chef: California finalist in 2025, and Saison itself has been a James Beard Outstanding Service finalist multiple times over the years.
