Our Take

Birdsong works American cooking with the kind of composure that shows most in the dishes nobody has to order: the sides. Chicory and brussels sprouts salad, butternut squash, bread pudding stuffing — the stuff that usually gets phoned in around a centerpiece gets the same attention as the centerpiece itself. The turkey is the headline, but the kitchen's instinct for balance, acid against roasted vegetables, richness cut with something green, is what actually carries the plate.

The pastry work backs it up. Pies with real structure, a coffee cheesecake that doesn't lean on sugar to make its point — this is a kitchen that treats dessert as technique, not afterthought. Service and room match the ambition; this isn't a place coasting on a tasting-menu format while the edges go soft.

There's some unevenness reported meal to meal, the kind that shows up when a kitchen is working at full stretch rather than playing it safe. It doesn't define the experience. Two Michelin stars confirm what the plates already argue: a restaurant executing American food with a level of care that's rare at any register, let alone at this one.

The Spot
Birdsong sits on Mission Street in SoMa, where Chef-Owner Christopher Bleidorn opened the restaurant in 2018 after working as a sous chef at Nine-Ten in San Diego, then through Alinea, Benu, Atelier Crenn, and Saison. The kitchen's approach is built on heritage cuisine: whole-form ingredients, local vegetables, and whole animals sourced from producers who work in step with their ecosystems, with a menu that shifts along with what's in season.

Chef de Cuisine Bergen Bowne, a CIA graduate who previously cooked at Cotogna and Angler, and Chef Zoee Wong, trained at Le Cordon Bleu London with time at Saison, Nobu, Ed.ju Omakase, and Restaurant Nouri, round out the kitchen alongside Bleidorn.

Michelin awarded Birdsong two stars in its 2026 guide.
