Our Take

Californios runs a sixteen-course tasting menu inside a room built like a stage set — black walls, dramatic lighting, a staff that moves in sync like they share one brain. The theater is the point, not a distraction from the food. Dinner opens with a printed booklet in an envelope, a small ceremony that sets the register for everything after: this is Mexican cooking treated with the full weight of fine-dining ambition, course after course built to be watched as much as eaten.

That ambition holds up through the meal. The kitchen doesn't borrow Mexican flavors as an accent — it builds the entire architecture of the tasting menu around them, and the room's intensity matches the plates instead of overshadowing them. Service keeps pace with a menu this long without losing warmth, which is the harder trick.

It isn't cheap, and it isn't trying to be. Californios asks for a full evening and a full commitment, and the complaints about cost are the complaints of a restaurant that has decided exactly what it's worth.

Three Michelin stars confirm what the room already tells you. This is one of the most fully realized Mexican fine-dining rooms in the country, and it knows it.

The Spot
Californios serves a 16-course tasting menu of Mexican fine dining from a room built to feel theatrical: high black walls, dramatic lighting, and a service staff that moves through the space with practiced choreography. The restaurant moved to SoMa in spring 2021 after six years operating in the Mission.

The experience is designed around ceremony — guests receive a multi-page booklet at the table outlining the evening before the meal even begins. The cooking leans into luxury ingredients, including caviar, layered into a modern take on Mexican cuisine.

Michelin awarded Californios three stars in the 2026 guide. The restaurant's chef has been a James Beard Foundation Best Chef semifinalist in multiple years, most recently in California in 2025, and Californios was named to the North America's 50 Best Restaurants list that same year.
