Our Take

State Bird Provisions runs on a dim-sum cart that has nothing to do with dim sum. Servers wheel palm-sized plates through the dining room — steamed tofu under pickled mushrooms, crudos cut thin as melon slices on fish-shaped platters — and the menu behind them pulls from Chinese, Italian, Japanese, and Jamaican technique without ever losing its Californian spine. That's the trick. A kitchen juggling that many traditions usually turns muddy. This one stays sharp, dish after dish, because every plate is built to be eaten in three bites and judged on its own.

The cart format makes the meal into a game everyone at the table plays together, which is why it still reads as an occasion restaurant more than a decade after it opened. People return for it, repeatedly, the way you return to a ritual rather than a meal. The fried quail that gave the place its name is reason enough on its own.

A James Beard Best New Restaurant win in 2013 and a Michelin star confirm what the regulars already decided years ago. The menu turns over constantly and a plate occasionally misses — that's the cost of this much range. It's a cost worth paying.

The Spot
State Bird Provisions began as a single recipe for serving quail and grew from there into a Fillmore Street restaurant built around small plates. Dishes move through the dining room on carts and trays, dim-sum style, drawing on tapas, banchan, and hors d'oeuvres traditions alongside that original quail dish. The room includes a chef's counter in addition to standard dining room seating.

The kitchen works from four stated tenets — salt, fat, acid, texture — applied across a menu that changes constantly rather than staying fixed to a format. The cart-and-tray service means the room runs on interaction between diners and staff as each dish passes by, and that rhythm has built a loyal following of regulars over the years.

Michelin awarded State Bird Provisions one star in 2026, following a James Beard Award for Best New Restaurant in 2013. Chefs Nicole Krasinski and Stuart Brioza won the James Beard Best Chef award in 2015.
