Our Take

Quince runs a ten-course tasting in a Jackson Square room dressed like a boutique with nothing on the walls to remind you what anything costs. The service choreography is the real flex: wine poured in sync, a staffer assigned to walk you to the bathroom, a server lifting a single asparagus spear out of a broth-filled glass bucket and setting it on your plate like it's something fragile and alive. That single gesture tells you what the kitchen is after — hyper-seasonal ingredients treated with a reverence that borders on theater.

Three hours is a long sit, and there are lulls where the pacing goes soft. But the highs are real and frequent enough to carry the meal, and a restaurant that's been doing this since the early '90s has earned the right to a few quiet courses between the fireworks.

The recognition backs up what the room already tells you: three Michelin stars for 2026, four James Beard Outstanding Restaurant finalist nods, three more for service. That's not a hot streak. That's three decades of not slipping.

The Spot
Quince opened in Jackson Square in 2003 under Chef Michael Tusk and has since gone through a year-long renovation and redesign. The restaurant runs two menus in parallel: the Gastronomy Menu, a tasting menu Tusk composes nightly, served exclusively in the main dining room, and the California Coast & Valleys menu, a four-course format built around the state's terroir and served in the more intimate Bolinas Bar, which also offers a four-course lunch on Fridays and Saturdays.

The cooking is hyper-seasonal and ingredient-driven, with moments of theater built into the format — one course arrives with a single stalk of asparagus lifted from a broth-filled glass bucket and plated tableside. Service runs with the kind of choreography — synchronized wine pours, staff tracking guests through every step of the meal — that diners consistently point to as exceptional, even as some describe execution and value as inconsistent given the price point.

Michelin awarded Quince three stars in 2026, and the restaurant was named to North America's 50 Best Restaurants list in 2025 and The New York Times' Restaurant List in 2024. The restaurant's chef was a James Beard Foundation Outstanding Chef award winner in 2026, following years as a finalist in that category, and Michael Tusk won the Foundation's Best Chef award in 2011 after several prior finalist nods.
