Our Take

Kiln sets itself inside a stark, brutalist room with maybe ten tables dressed in crisp white linens against bare gray walls, then pipes in punk rock and rap loud enough to rattle the quiet. The contrast is the whole point. The tasting menu runs eighteen to twenty courses built around curing and preserving, loosely Scandinavian in instinct, and the plates arrive minimal while the flavors go maximalist. It's disorienting on purpose, and it works.

There's only one way to eat here: the full tasting menu, no à la carte escape hatch. That commitment is what makes the format cohere instead of sprawling. Walking in cold, the room can read intimidating — no decoration, no warmth in the walls — but the kitchen earns the nerve it asks of you.

Some nights land harder than others; a tasting menu this long and this inventive has room to wobble, and a few recent visits have called it inconsistent. But the strong nights outnumber the shaky ones by a wide margin, and the ambition rarely feels like posturing.

Two Michelin stars and a James Beard Best New Restaurant semifinalist nod confirm what the room already tells you: this is one of the most genuinely exciting tasting menus in the city right now.

The Spot
Kiln occupies the former Cala space in Hayes Valley, a stark brutalist room of about ten tables dressed in crisp white tablecloths against bare gray slab walls. Loud punk rock and rap play through the speakers, a deliberate jolt against the room's formality.

The restaurant serves a single tasting menu, running 18 to 20 courses, built around techniques of curing and preserving, with a sensibility that leans loosely Scandinavian. Presentation stays minimalist even as the flavors underneath layer in bold, maximalist combinations, with foam-based technique showing up throughout the progression.

Service has drawn consistent praise for its precision, matching the exacting nature of the cooking.

Michelin awarded Kiln two stars in its 2026 guide. The restaurant was also a James Beard Foundation Best New Restaurant semifinalist in 2024.
