Our Take

Estiatorio Milos Miami Beach stakes its reputation on seafood done simply, and the South Beach room gives that approach room to breathe. The whole point of a seafood house this focused is that there's nowhere to hide: the fish has to be handled right, every time, with nothing dressed up to cover for it. That's the argument being made here, and it holds.

A restaurant built this narrowly around one category of cooking either earns the confidence or gets exposed by it fast. This one earns it. The kitchen treats seafood as the entire reason to show up, not a category on a broader menu, and that discipline is what separates a genuinely strong seafood restaurant from one that just lists a lot of fish.

The Michelin Guide selected it for 2026, which tracks with what's on the plate rather than driving it. That's recognition catching up to a kitchen that was already doing the work, not a trophy propping up a shaky concept. Seafood this committed, in a setting built for it, is worth the trip.

The Spot
Estiatorio Milos Miami Beach is chef Costas Spiliadis's South Beach location of his Greek seafood concept, built on an à la carte, shared-plates format rather than fixed courses. The kitchen works from fish sourced daily through local fishermen, with raw and simply grilled preparations doing most of the talking.

The menu runs from raw and chilled dishes — sashimi of bigeye tuna, Hiddenfjord salmon and lavraki, a mixed raw fish platter, Greek-style lavraki ceviche, East and West Coast oysters — to Milos Classics like chargrilled octopus with Santorini fava. The Milos Special, thinly sliced and fried zucchini and eggplant stacked tableside, and a warm whole lobster salad for two are among the dishes that recur across the Milos name. Rhode Island fried calamari and, in season, Portuguese grilled sardines round things out.

Michelin selected the restaurant for its 2026 guide.
