Sushi | Bar occupies a discreet 12-seat counter inside the Esmé Hotel in South Beach, reached through an unmarked door. The seventeen-course omakase menu moves through new-wave nigiri and other dishes from land and sea, with each course served by the chef who prepared it.
The restaurant deals directly with Japanese markets, flying in high-grade fish for the counter. An adjacent cocktail lounge pours bespoke cocktails, giving guests a place to start or end the evening outside the counter itself.
Sushi | Bar began in Austin and has since opened counters in cities including Charleston, Dallas, Miami Beach, Montauk, Nashville and Palm Beach, each keeping the same small, unmarked-door format. The concept was founded by Ryan Stock, Josh Tohl, and Jonathan Husby.
