The kitchen nixtamalizes its own corn, using the same hominy for pozole and masa for tortillas. Three pozoles anchor the menu — verde, rojo, and negra — each built on a different broth and protein, served with cabbage, lime, red chile sauce, and crisp tortillas. A guisado section rotates based on what the kitchen wants to cook that week, alongside tacos and other entradas.
Avila was a James Beard Foundation semifinalist for Best Chef: Mountain in 2023, and La Diabla was named to The New York Times' Restaurant List that same year. It has earned a Michelin Bib Gourmand in both 2024 and 2025.
