Our Take

Milpero sits in Globeville, a stretch of Denver that doesn't get much restaurant attention, and it's doing Mexican food good enough to pull people off their usual paths. The word that keeps surfacing is authentic, and it holds up against the kind of scrutiny that matters: the room feels lived-in rather than styled for a camera, the kitchen isn't chasing trend-plate tricks, and the plates read like someone's actual repertoire rather than a menu built to impress.

What separates it is consistency. Great food and great service aren't a one-night accident here — the pattern holds visit after visit, which is harder to pull off than a single standout dish. People leave saying it was worth it, and they mean the whole experience, not just one course.

The Michelin star confirms what the neighborhood already knew. Milpero earns its reputation by doing the fundamentals relentlessly well, in a part of the city that isn't used to this level of attention. Go find it.

The Spot
Milpero is a 16-seat space in Globeville that seats eight guests per seating, walking them through an 18-course tasting menu over roughly three hours. The evening moves through distinct stages: a welcome antechamber for an opening libation, a cold counter for raw dishes, a glass-enclosed wine and fermentation room stocked with house-made pulque, tejuino, cremas, vinegars, and atole agrio, and finally a hot counter where masa is the focus.

That masa is nixtamalized in-house from heirloom corn grown southeast of Boulder through a partnership with the Masa Seed Foundation, part of an ancestral corn preservation project. The same hand-harvested corn is distilled, in collaboration with Bozal, into Bozal Maize, a vegan corn pechuga-style mezcal made exclusively for the restaurant.

Chef Johnny built the menu as an extension of his work deepening diners' understanding of Mexican food traditions. Michelin awarded Milpero one star in its 2026 guide, and the restaurant was included on The New York Times' Restaurant List that year.
