Alteño

Alteño works because it refuses to choose between spectacle and substance. The room does its job first — beaded chandeliers, low light, a dark and sultry pull that keeps the bar up front full and the open-kitchen dining room behind it just as alive. But the Jaliscan Highlands-focused menu doesn't coast on the atmosphere. It earns its seat.

The jalapeño cornbread gratin is the table consensus, and it's easy to see why: it exists mainly as a vehicle for huitlacoche butter, and nobody's embarrassed about slathering it on thick. The kanpachi tostada is the sharper dish, the one that argues this kitchen isn't just running a good version of a familiar bar menu. It's working with more precision than the scene around it suggests.

A chef building a specific regional point of view inside a room engineered for a good time is rare enough on its own. Michelin's 2025 selection is confirmation, not the reason. The reason is a kitchen that keeps pace with a dining room this loud, which is harder than it looks.
