Gibsons Bar & Steakhouse opened on North Rush Street in 1989, the founding restaurant of what grew into Gibsons Restaurant Group. It set the template the group later carried to other locations: a classic American steakhouse built on Gibsons Prime Angus Beef and Gibsons Grassfed Australian Beef, backed by fresh fish, an extensive wine list, and classic cocktails at the bar.

Steaks like the Chicago cut and prime rib anchor the menu, with shrimp cocktail, double baked potatoes, and carrot cake among the dishes regulars keep coming back for.

The restaurant was a James Beard Foundation semifinalist for Outstanding Service in 2019, and The Infatuation has scored it 8.2/10.
