Franklin Barbecue sits on Austin's East Side, built on a straightforward premise: barbecue is only as good as what goes into the smoker. The kitchen sources USDA Prime brisket, pork ribs and shoulders from heritage Duroc-breed pigs, and turkey raised specifically for a clean, honest flavor.
The menu stays tight — brisket, sausage, ribs, turkey, burnt ends, beans, cole slaw, and pecan pie make up the core of what's on offer, smoked the traditional Central Texas way.
The restaurant has earned a Michelin Bib Gourmand in both 2024 and 2025, holds a spot on the Eater 38, and a chef here won the James Beard Award for Best Chef in 2015.
