La Bonne Vache began, as the story goes, over a Sunday family dinner — founded by two couples and a friend with the idea of a neighborhood bistro built for families. The restaurant took over the longtime Georgetown space once occupied by Booeymonger, keeping its neighborhood footing while building something new inside it. The name is French for "the good cow."
Chef/Partner Robert Aikens runs a menu that reimagines French flavors through burgers, sandwiches, and comforting entrées rather than a classical bistro repertoire. Partner Rachel Aikens designed the interiors, and Operating Partners Ari and Claire Wilder curate the beverage program. Founding Partner Mandi Klingler is often at the bar herself, and General Manager Guillermo Roa leads a front-of-house team built around warm hospitality.
