Chang Chang plays it two ways, and both work. The peking duck buns and Shanghai soup dumplings are the safe order, and they earn their reputation — familiar dishes worth a return visit on their own. But the real case here is chef Peter Chang's willingness to bend the menu into something stranger and better.

The sweet and sour spareribs make the point: bite-sized, glazed in a housemade plum sauce built on osmanthus flower, a flavor that burrows in rather than announcing itself. The rosemary chicken wings read like filler on the page and aren't one on the plate. This is a kitchen using Chinese technique as a starting point, not a script.

Diners keep returning for a reason: the food is consistent, the value holds up, and the cooking earns the word authentic without leaning on it. There's friction on off nights, some grumbling about portions and service, but it hasn't dented what the kitchen puts out. Three straight years of Michelin recognition back up what the plates already argue.
