The service is attentive without hovering, the room reads as a place people return to rather than a one-time destination, and the plates land as advertised, meal after meal. That consistency is the real case for it — this isn't a kitchen having a good night, it's a kitchen that has figured out its own standards and holds them.

Dupont Circle has no shortage of Mediterranean options trading on atmosphere alone. Balos separates itself by getting the fundamentals right at volume, which is harder than it sounds and rarer than it should be. Diners keep describing the same things — food, service, room — as reliably strong, which is the opposite of a fluke.
