Taqueria Los Mayas has been serving Yucatecan cooking in the Inner Richmond since 2017, founded by Chef Juventino Carrillo. It's a counter-service operation with a menu that runs long: tacos and burritos on hand-made tortillas, made-to-order empanadas, tortas, nachos, and seafood dishes alongside Yucatecan specialties.
The cochinita pibil is slow-cooked, and the panuchos — fried, bean-filled tortillas topped with meat, cabbage, and pickled onion — are a reference point for the kitchen's style. There's a tofu con achiote for vegetarians, built on the same achiote flavoring as the meat dishes.
