The Spot
Holbrook House occupies the Conservatory at One Sansome in San Francisco's Financial District, pairing a bar and restaurant format with breakfast and lunch service built around a raw bar. Phil Spiegel, a longtime figure in San Francisco hospitality through his work with Merchants Exchange Productions on properties including the Julia Morgan Ballroom and Credo Restaurant, is the principal behind the project.

Mornings run through dishes like the Star Girl Breakfast (eggs, bacon or sausage, potatoes, toast), an avocado toast with soft-cooked egg and pecorino, the HH Breakfast Sandwich on a house-made English muffin, and house-made granola. The raw bar carries scallop crudo, salmon tartare, shrimp cocktail, and seafood towers that scale from a Petit version with half a dozen oysters up to a Grand Tower with a dozen oysters, lobster, crab, and caviar.

Cocktails arrive via a tableside cart that rolls between booths and out to the atrium, pouring customizable martinis finished with touches like basil oil, tomato vermouth, or a pickled quail egg. By early evening the room fills with Financial District office workers settling into the bar.
