Our Take

Prelude takes Southern food and runs it through a fine-dining register most cities never attempt, let alone pull off. San Francisco has almost no real competition in this lane, and Prelude isn't coasting on that scarcity — it's building dishes smart enough to stand on their own. A lightly crusted chicken wing stuffed with dirty rice replaces the expected fried chicken. Chicken-fried sweetbreads land with plum sauce instead of gizzards. Catfish gnocchi reads as a soft, clever stand-in for chicken and dumplings. Every substitution is a real idea, not a gimmick.

The room, tucked into the ground floor of the Jay Hotel, carries itself with some polish but never locks out anyone who isn't dressed for it. Come in a suit or a band tee — the kitchen's seriousness doesn't ask you to match it. Service and atmosphere both hold up their end, and the consistency shows: this isn't a kitchen having a good month, it's one that's figured out what it's doing.

Michelin has already put Prelude on its radar for 2026. That's confirmation, not the argument — the argument is a menu that takes Southern cooking's familiar comforts and makes them sharper without losing what made them comforting in the first place.

The Spot
Prelude sits on the ground floor of the Jay Hotel in San Francisco's Financial District, serving Southern cooking built on family recipes passed down from maternal grandmothers in Alabama, filtered through contemporary technique and Bay Area ingredients. Executive Chef Celtin Hendrickson-Jones previously cooked at Niku Steakhouse, Commis, Verdant, and Morimoto.

The menu runs a la carte rather than as a set tasting menu. A lightly crusted chicken wing stuffed with dirty rice stands in for classic fried chicken, chicken-fried sweetbreads arrive with plum sauce in place of fried gizzards, and catfish gnocchi plays on chicken and dumplings.

The room has an open kitchen and has built a following of regulars who return for the food and the atmosphere alike. The Michelin Guide selected Prelude in 2026.
