Our Take

Flour + Water is the kitchen that proved San Francisco could do Italian food with real technique behind it — hand-rolled pasta and wood-fired pizza built on a dough and sauce discipline so sound it spun off an entire family of pizzerias across the city, all running the same fundamentals. That lineage isn't incidental. It's the clearest evidence of how deep the kitchen's command of crust and dough actually goes.

The Mission room backs it up: a menu that doesn't wander, service that keeps pace, an atmosphere that still draws a crowd on a weeknight without feeling like a tourist stop. The complaint that surfaces most is the gap between reputation and expectation — people walk in primed for a revelation and get, instead, a very good trattoria doing its job at a high level, consistently. That's not a flaw. That's what sustained quality actually looks like after over a decade.

A James Beard Best New Restaurant finalist nod in 2010 and a Michelin selection in the current guide confirm what the room already tells you: this isn't a place coasting on an old reputation. It's still cooking like it has something to prove.

The Spot
Flour + Water sits in the Mission, built around a daily-changing menu of fresh, handmade pasta formed at its own Pasta Shop, Neapolitan-style pizzas, and seasonal antipasti drawn from regions across Italy with a Northern Californian influence. Co-Chefs Thomas McNaughton and Ryan Pollnow lead the kitchen.

Michelin selected Flour + Water for its 2026 guide. The restaurant was a James Beard Best New Restaurant finalist in 2010, and the restaurant's chef was a James Beard Rising Star Chef finalist three years running, from 2011 to 2013.

Service and atmosphere draw consistent praise, and the pasta program in particular has built a steady following, though opinions on the non-pasta dishes run more mixed.
