Our Take

San Ho Won works from behind an unmarked all-white facade in the Mission, and the room gives nothing away until the galbi arrives. The short rib comes charred at the edges, caramelized hard, with fat running through it in long glistening lines — the kind of dish that justifies a reputation on its own. It's the best version of that dish in the city, and it's not close.

The rest of the operation backs it up. Service is attentive enough that a full room never feels like it's being managed, and a pot of roasted barley tea at the start sets the tone before the first course lands. The design is minimal, almost austere, which puts the attention exactly where it belongs: on the food. People call it overrated, but that complaint reads more like frustration at how hard the room is to get into than an actual critique of what's on the plate.

A Michelin star and a spot on a national recognition list in 2026 confirm what the kitchen was already proving night to night. San Ho Won is the best Korean restaurant in San Francisco, and the galbi alone is worth the trouble of getting a table.

The Spot
San Ho Won is a Korean charcoal BBQ restaurant in the Mission District, opened in fall 2021 as a collaboration between Corey Lee and Jeong-In Hwang, who had worked together at Benu before this project. The space is minimalist and housed in an unmarked all-white building, with service that keeps tables moving through a steady rhythm — roasted barley tea arrives as soon as guests are seated.

Meat is grilled tableside over lychee wood charcoal rather than a gas burner, paired with a range of homemade sauces and condiments. The galbi has built a strong reputation, with short rib charred at the edges and threaded with fat. Beyond the grill, the kitchen draws on traditional Korean processes — aging, fermenting, marinating — filtered through local ingredients and modern technique. An egg soufflé on the menu tends to split opinion among diners.

Michelin awarded San Ho Won one star in its 2026 guide. The restaurant's chef was a James Beard Best Chef: California semifinalist in 2024.
