Our Take

Ariete cooks Cuban-American food like it's inventing a cuisine in real time, because it is. French technique meets local ingredients meets a kitchen that answers to no tradition but its own: seared foie gras finished with naranja agria caramel, flan built around candy cap mushrooms, pastelitos stuffed with caviar and tartare. These aren't fusion gimmicks. They're the logical next step for a community whose food has been evolving since the first generation left Camagüey, and the kitchen treats that evolution as the actual subject of the meal.

What makes it work is the confidence. Nobody in Camagüey was eating uni or tartare, and Ariete isn't pretending otherwise — it's cooking for what Miami Cubans have actually become, not some frozen idea of heritage. That's a harder trick than straight nostalgia, and rarer: food that reads as both history lesson and forecast, specific to one city and impossible to transplant.

The recognition followed the idea, not the other way around. A James Beard Outstanding Restaurant semifinalist nod and a Michelin star confirm what the plates already argue — this is its own genre, not a variation on someone else's. There's nothing else quite like it, here or anywhere.

The Spot
Ariete sits in Coconut Grove, where chef Michael Beltran builds a menu around Cuban heritage filtered through classic French technique and local sourcing. The restaurant runs both an à la carte menu and a tasting menu called Versos Sencillos, available daily.

The menu moves from a calabaza brioche bread service with cultured butter through snacks like the Caviar Pastelito and Grilled Oysters finished with uni butter and bone marrow, into appetizers such as Crudo Hamachi and Tuna Conserva. The Duck Press is the restaurant's signature dish.

Michelin awarded Ariete one star in 2026. The restaurant was also a James Beard Foundation Outstanding Restaurant semifinalist in 2023, and the restaurant's chef was a Best Chef semifinalist in 2022 and 2020.
