Smyth sits in Chicago's Fulton Market District, where Executive Chef John B. Shields and Executive Pastry Chef Karen Urie Shields run a tasting-menu restaurant built around an open kitchen. Diners eat close to where the food comes together, watching the pass as courses move through the room.
Michelin has followed Smyth's climb closely: one star in 2017, two stars in 2018, two stars again in 2021, then three stars every year from 2023 through 2025. The James Beard Foundation has recognized the kitchen repeatedly, naming it a Best Chef finalist in 2020 and 2022, an Outstanding Restaurant semifinalist in 2023, and an Outstanding Chef semifinalist in 2024. StarChefs included Smyth in its 2021 Rising Stars class.
The recognition has continued into recent years. Smyth landed on North America's 50 Best Restaurants list in both 2025 and 2026, and Robb Report named it among its Best New Restaurants for 2026. Eater and Time Out Chicago have both included it on their best-of rundowns, and it's linked to sister restaurant The Loyalist.
