Ever is Curtis Duffy's second act, and it runs on the same fanatical exactness that carried Grace to three stars before it closed. Two Michelin stars arrived in Ever's first guide year — caviar, king crab, squab, each course composed to the millimeter in a dining room engineered for calm.
