Carnitas Uruapan built its name on one thing done right: slow-cooked pork, rendered down until it turns tender and deeply porky, then piled into tacos dorados and the other classics that carry the family name across its locations. The Pilsen room does what a neighborhood carnitas spot should do — it doesn't dress up the food, it just gets out of its way. There's no tasting menu logic here, no seasonal reinvention. That consistency has been noticed outside the neighborhood. The Michelin Guide selected the restaurant, and national lists have circled back to it more than once. None of that recognition changes what's on the plate. It just confirms what the plate already proves.
