Our Take

Cantón Regio plays it straight: grilled meat, done right, in a room built to make an occasion out of it. The dining room has real presence, brick and wood run up into high vaulted ceilings, with saddles and wagon wheels on the walls that lean into a rustic Southwestern feel without tipping into theme-park territory. The service moves warm and attentive, not rushed.

The kitchen's whole case rests on execution, and it holds up dish by dish. Steaks come out tender, brochetas of shrimp and chicken arrive still hanging off their hooks, fajitas hit the table sizzling and well-seasoned. Nothing here reinvents Mexican grilling, it just does the fundamentals with real discipline. The flour tortillas made in-house are good enough to build a meal around on their own, and that's the kind of small detail that tells you the kitchen cares about the parts nobody would call out if they were mediocre.

A Michelin selection in 2021 backs up what the room already argues. This is a restaurant confident in a simple premise, executed consistently enough that the confidence is earned.

The Spot
Cantón Regio has been a fixture on 18th Street in Pilsen, serving Mexican food with machacado con huevo — dried shredded beef scrambled with egg — as the house special. The tacos Sabinas draw regular praise from customers as well.

The restaurant has developed a reputation as a family-run neighborhood spot, with mariachi music contributing to the atmosphere and a service style that keeps people coming back. Diners have been known to travel across the city for it rather than opt for something nearer.

Cantón Regio was selected for the Michelin Guide in 2021.
