HaiSous works in Pilsen with a straightforward premise: Vietnamese cooking, shared plates, no fusion apologies. The kitchen's chef came out of Embeya, and the papaya salad carries over, but the restaurant around it is its own thing, built for a room that wants a table full of dishes rather than one plate to stare at alone.

The prawn summer rolls arrive with a hoisin sauce, sharp and balanced. The grilled ribeye, cut with a lime juice dipping sauce, takes a familiar cut and treats it like Vietnamese food rather than a translated steakhouse dish. The wins add up dish by dish; nothing here is coasting on the format.

Recognition has followed for years, not a single moment. A Michelin Bib Gourmand, a run of James Beard Best Chef nods stretching back to 2019, and a Best New Restaurant nomination the year it opened. That kind of sustained attention across seven years means the kitchen kept its edge instead of settling into it.

HaiSous earns its spot for the food, and the honors just confirm what the plates already argue.

HaiSous Vietnamese Kitchen sits in Pilsen, run by Chef Thai and Danielle Dang, who set out to show Chicago diners Vietnamese flavors they hadn't tried before, in a room they describe as chic, approachable, and warm.

The menu runs both à la carte and as a Grand Tasting Menu, with Chef Thai using the tasting format to dig deeper into the history behind the cuisine. The restaurant has drawn sustained national attention.
