NINE-TEN Restaurant & Bar

NINE-TEN sits inside a La Jolla hotel, an address that trains you to expect safe banquet food. It does the opposite. The kitchen runs American and Caribbean together as a real idea, and the jerk dishes prove it. The grilled chicken is aromatic and properly spicy, cooked like someone learned the technique instead of borrowing the seasoning. The pork belly appetizer goes further: cubes in jerk jelly with plantains and black-eyed peas, sweetness and heat held in exact balance. That dish belongs on the city's short list of things worth driving for.

The cacio e pepe shows the same discipline pointed elsewhere — handmade porcini spaghettini and shaved mushrooms built for umami rather than richness for its own sake. Two cuisines, one kitchen, both taken seriously, with service and room to match.

Recognition has followed. Michelin has selected it in back-to-back guides. That's not the reason to go. The reason is a hotel restaurant that refuses to coast on its address and cooks two cuisines like it has something to prove in each.
