The Paper Bridge (Bún Chả Cầu Giấy)

The Paper Bridge is doing something almost nobody else in Portland attempts: real Northern Vietnamese cooking, the Chinese-inflected side of the country's food that gets skipped over in favor of pho and banh mi. Pho is on the menu because it has to be, but it's not the point. The point is Hai Phong-style spring rolls packed with local Dungeness crab, grilled oysters finished with scallion oil, crushed peanuts, and pork rinds in the style of Ha Long, and a whole turmeric-marinated fish sizzling with dill and scallions that reads like a centerpiece because it is one.

The menu backs up its ambition with actual explanation — every dish gets context on the back page, so you're never guessing what region or tradition you're eating. Go with a group. This food wants a table of little plates working toward the big fish, not a solo bowl of soup.

The room does its part too: a basement space warmed up with woven baskets, hanging plants, and jars of rice wine steeping with rose myrtle and mulberries lined up on the counter like inventory of intent. The New York Times noticed. It's not hard to see why.
