Ha VL doesn't run a fixed menu. Instead, the kitchen inside Wing Ming Market Centre rotates through a different lineup of Vietnamese noodle soups depending on the day of the week, with no official website to check ahead — regulars simply learn the schedule.

The rotation moves through dishes like bún riêu and bánh canh cua, chicken curry noodle soup and bún mọc Hà Nội, bún bò Huế on Saturdays, and mì Quảng and phở bắc on Sundays, among others. Broths are built from pork, chicken, or beef depending on the soup, each one made fresh for that day's batch.

Ha VL has been nominated for a James Beard Award. It's built a loyal neighborhood following on the strength of its broths, reasonable prices, and a limited daily menu that keeps regulars coming back to catch whichever soup is up — some days selling out before closing.
