Le Pigeon cooks French technique like it owes nothing to tradition. Shrimp toast gets apricots and shaved truffle. Sweet corn panna cotta gets huitlacoche syrup. The instinct throughout is to take a classical French base and push it somewhere unexpected without losing the discipline underneath — that combination is rare, and it's the reason this kitchen gets named first when the question is who does French food best in this city.

The room matches the food's lack of pretense: sage green walls, exposed brick, a tiny open kitchen with pots hanging overhead, seating close enough that the cooking is part of the show. The tasting menu, vegetarian option included, is built for an occasion — an engagement, a promotion, a night worth the splurge — and it delivers on that promise without turning stiff or formal about it.
