Our Take

Central Provisions runs on shared plates, and the range is the point: surf clam ceviche next to suckling pig next to a spread of charcuterie, built for a table that wants to order everything and fight over the last bite. It's a small room in the Old Port doing big volume, and the food justifies the crowd rather than just surviving it.

That popularity is real and it's earned, but it also means showing up without a plan is a mistake. The house handles this correctly: a downstairs bar serves the full menu, so the wait becomes a drink and a snack instead of dead time on the sidewalk. Locals who've been going for years and visitors who found the place once and rearranged their trip around it end up at the same tables, which tells you the draw isn't novelty.

The James Beard Foundation named it a Best New Restaurant finalist, and Portland's own press has kept it on their short lists since. Neither is why it works. It works because the shared-plates format actually earns its ambition here — nothing on the table is filler, and a group can eat its way through most of the menu without hitting a weak dish.

The Spot
Central Provisions occupies 414 Fore Street in the Old Port, a building whose name nods to its original use as a storehouse for provisions on what was once Central Street wharf. Chef Chris Gould runs the kitchen, and the dining room seats guests on bar stools and chairs made by local craftsmen, with tabletops of reclaimed heart pine and seat backs cut from old wine-barrel staves.

The menu has included crab salad, bread and butter, tuna crudo with garnish, and suckling pig — dishes that move between light, raw preparations and heavier, shared plates. The kitchen sources from local farms and businesses.

Regulars point to inventive small plates, standout desserts, and a lively room, alongside service that comes up often enough to be part of the restaurant's identity.

Central Provisions was a James Beard Foundation Best New Restaurant finalist in 2015, and Portland Press Herald named it among the city's best restaurants in 2025.
