Wildflower sits inside the Gravity Haus hotel in Denver's Lower Highlands, its identity built around the story of Marigold de la Rosa, a fictional 19th-century free spirit imagined as the daughter of a Mexican horticulturist and an Italian beekeeper. That imagined dual heritage shapes the kitchen's approach: cooking that leans Italian, built on seasonal Colorado ingredients and partnerships with local farmers and producers.

The drinks list follows the same logic, working coffee, mead, and natural wine into the experience with an emphasis on where things come from rather than a conventional wine program.

Wildflower was named a selection in the inaugural Michelin Guide Colorado in 2025, and Westword included it on its best of 2025 list.
