The Wolf's Tailor went from one Michelin star to two, and the jump measured something real: Kelly Whitaker's tasting menu — heirloom grains milled for the house, courses that treat sourcing as the story — matured from ambitious to inevitable.

Whitaker's obsession is the supply chain itself: grain, flour, fermentation, fire. Most tasting menus decorate their sourcing. This one is built out of it, and the second star says the difference shows on the plate.

The Spot
The Wolf's Tailor serves a tasting menu in Denver's Highland neighborhood. Reviewers frequently mention a buckwheat course along the way and a dessert finish, with plating and pacing drawing regular comment from diners marking special occasions there.

Recognition has stacked up quickly. Michelin awarded the restaurant one star in the 2024 Colorado guide, then moved it to two stars in 2025. The James Beard Foundation has named the kitchen a Best Chef finalist in 2020 and a Best Chef semifinalist in 2019, while also naming it an Outstanding Pastry Chef semifinalist in both 2019 and 2026. StarChefs included the team in its 2022 Rising Stars class for Denver.
