Uchi Denver is part of the Uchi Restaurants group founded by chef Tyson Cole, whose original Austin sushi bar became the basis for a multi-city expansion. The name Uchi means "home" in Japanese, tied to Cole's early years at the sushi counter and the intimacy he found working close to guests. The Denver location sits in Five Points.
The menu runs across nigiri, small plates, and hot dishes: Hama Chili yellowtail with ponzu and Thai chili, Madai nigiri, Kinoko Nabe with seasonal mushrooms and koshihikari rice, oak-grilled Walu Walu escolar with yuzupon and candied citrus, and Karaage chicken thigh with sweet chili and pickle. An omakase is also offered. Fried Milk — a vanilla custard and salted fudge dessert built on a toasted blondie base — is a recurring order.

The room was designed by Tres Birds Workshop using reclaimed and native lumber, with Douglas fir booths and banquettes bringing a Japanese design sensibility into the space. The custom chairs and dining furniture were fabricated by Denver-based House Fish in collaboration with the design team.
