Sushi Den has operated in South Denver's South Pearl Street corridor since 1984, part of the Den Corner group alongside Izakaya Den and OTOTO. The kitchen's identity centers on its Catch of the Day program, fish sourced directly from Japanese markets and worked into the menu as it arrives.

At the sushi bar, a Set Course dinner offers twelve pieces of that day's fish served across several courses, four varieties per course, with an amuse bouche and miso soup included — a lineup that shifts daily depending on what came in. Sushi Den also runs a private Chef's Table room in Okonomi style, pairing guests with a dedicated chef for special occasions.

The James Beard Foundation named Sushi Den a semifinalist for Outstanding Restaurant in 2020, and it has appeared on both 5280 Magazine's and Westword's best-of-city lists in 2025.
