TOKIO is chef and owner Miki Hashimoto's second act in Denver, arriving after 18 years overseeing Japon. With this Five Points restaurant, a block west of Coors Field, he shifts toward the cutting-edge style of Tokyo dining, built around sushi, ramen, and other contemporary Japanese dishes.
The room itself was designed by Kanji Ueki, an architect who has also worked on Apple store interiors, giving the space a pared-down, composed look. A sake list centers on Hakushika, poured alongside the kitchen's rotating plates.
Regulars point to the sushi and ramen quality, the multi-level design, and pricing that holds up against the food, with service consistent enough to draw people back.
