Bar Dough is a neighborhood restaurant serving a modern take on regional Italian cooking in Highland. The kitchen turns out handmade pasta and wood-fired pizza, leaning on Colorado agricultural products, alongside an Italian-inspired cocktail and wine program.

Max MacKissock opened Bar Dough in 2015 after more than 18 years running kitchens in Colorado, time spent studying technique and tradition in Italy layered onto a classical French foundation. He went on to help open other Denver restaurants, including Señor Bear and Ash'Kara.

Stefy DeVita leads the kitchen today. She came up as sous chef under Carrie Baird and trained under chef Michael Mina at his FarmTable Cucina in St. Petersburg, Florida, before bringing that grounding in Italian cooking to Bar Dough.

Bar Dough's kitchen has been recognized by the James Beard Foundation, with a Best Chef finalist nod in 2020.
