Union Dumpling House took over the old Gather space and turned it into a dumpling operation with real range. Pork and chive sits next to cilantro lamb, and the fusion fillings push further without losing the point of a dumpling: a tight wrapper, a filling that's been thought about, sauce that does its job and gets out of the way. Nothing here is trying to be more than what it is, and that restraint is exactly what makes it work.

The kitchen isn't coasting on a gimmick. Pairing a classic pork and chive against something like cilantro lamb is a real argument about what a dumpling can hold, and both ends land. That range, plate to plate, is the whole case for eating here more than once.
