Our Take

The Publican commits to three things — beer, pork, and oysters — and builds the whole room around that commitment. It's staged as a European beer hall, and the room proves it: soaring ceilings, heavy wood furnishings, and a U-shaped communal table that seats most of the house together. This isn't a place for quiet corners. You're eating pork and shellfish elbow to elbow with strangers, and that's the point.

The people behind it built Avec, Big Star, and Dove's Luncheonette, and that same instinct for a specific, well-executed idea shows up here. The kitchen doesn't chase versatility — it goes deep on a narrow menu and does the pork and the oysters right, with beer chosen to match rather than just fill a tap list.

Chicago Magazine has kept it on the map, and Michelin selected it in 2021. Both track with what the room delivers: a loud, communal, specific experience that knows exactly what it's for. It won't work for everyone at that table, literally or otherwise, but for what it sets out to do, it does it well.

The Spot
The Publican sits in the Fulton Market District with the feel of a European beer hall: long tables, high ceilings, and a room built for groups. The menu leans farm-to-table, moving between a raw bar of oysters and shellfish, heritage pork dishes, housemade charcuterie, globally inspired seafood, and vegetable plates that shift with the seasons.

The drinks program matches the food's ambition — a beer list that includes collaborations with local brewers, a wine list built around bottles with a story, and cocktails designed to work alongside the menu rather than around it. Regulars also point to the brunch service, with pastries that have built their own following.

The Publican was named to Chicago Magazine's best restaurants list in 2025 and was selected in the Michelin Guide in 2021.
