Maxwells Trading reads like a dare on paper: clay pot rice next to French onion dip, a wine list built with real intention, vinyl on the speakers, all inside a warehouse room in the West Loop. The kind of combination that should collapse into gimmick collapses into nothing. Each dish holds together on its own terms, and the range across the menu argues for a kitchen confident enough to not pick a lane.

That confidence extends to the room itself. The space reads chic without trying hard for it, the kind of warehouse conversion that feels considered rather than default-industrial. The bar runs first come, first served, which matters, because it means the place doesn't wall itself off from anyone willing to show up and wait.

The recognition has been consistent rather than one loud moment: Michelin selection in back-to-back years, a Robb Report new-restaurant nod twice over, and Best Chef nods from the James Beard Foundation running from semifinalist to finalist and back to semifinalist again. That's not a single splashy debut — it's a kitchen that keeps performing at the level that got it noticed in the first place.

The Spot
Maxwells Trading sits on Carroll Avenue in the West Loop, a concept from Underscore Hospitality partners Josh Tilden and Erling Wu-Bower. The restaurant is named for Wu-Bower's son Maxwell and sits beneath an urban farm run by The Roof Crop, which supplies ingredients including honey, with crops chosen collaboratively based on the menu.

Wu-Bower and Executive Chef Chris Jung run the kitchen, cooking a menu that blends Asian influences with American traditions — Wu-Bower is the son of a Chinese immigrant and a Louisiana native, while Jung was born in Korea and raised in New York City and the D.C. suburbs.

Recognition has followed quickly. Michelin selected Maxwells Trading in both its 2024 and 2025 guides. The James Beard Foundation named Wu-Bower a semifinalist for Best Chef: Great Lakes in 2025, a finalist that same year, and a semifinalist again in 2026. Robb Report included the restaurant among its Best New Restaurants in 2024 and 2026, The Infatuation scored it a 9/10, and it has appeared on best-of lists from Eater and Time Out Chicago.
