Grain and Sea runs on a build-your-own format: pick up a box and tongs, move through a case of more than 30 options including nigiri, gunkan, inari, and signature rolls, then pay by weight at the scale. It's a structure built for sampling widely rather than committing to one roll, and it puts gunkan and inari — pieces a standard sushi menu often leaves out — on equal footing with the more familiar maki and nigiri.
