Gilt Bar got there first. Before River North filled in with towers and crowds, this was the room that invented the neighborhood's dark, low-lit, speakeasy mood, and it did it before the same ownership group built out Au Cheval and Bavette's into citywide obsessions. That's worth stating plainly: the atmosphere everyone now imitates started here.

What keeps it worth a seat isn't nostalgia. The kitchen still cooks with the same confidence that made it stand out against a strip of galleries and dive bars a decade-plus ago, and it hasn't gotten lazy just because the neighborhood caught up to it. The room still feels like a discovery even when it's packed.
